Smoked Salmon Waffles hit the spot

On a drizzly and chilly Sunday afternoon recently, I decided that the Smoked Salmon waffles would be the perfect supper that night. I went to our neighborhood food coop for the smoked salmon and the Spring onions. I then hauled out my old Belgian waffle iron and plugged it in. Then I made the waffle batter, which was very straight forward, and let it sit for about an hour. Since this was supper, I made a carrot salad and a green salad also. The waffles cooked well, not sticking to the waffle iron, I put them in a warm oven and cooked the entire batter, keeping them warm in the oven while others were cooking.  I think we were all pretty happy with the results; the taste was filling and delicious. The combination of the smoked salmon and the spring onions was perfect...and we had some chives in the garden which I clipped and sprinkled on top. I would make this again!
